- In a large bowl, combine the boneless chicken pieces with egg white, cornstarch, salt, and black pepper. Marinate for 10-15 minutes.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat until shimmering. Fry the marinated chicken in batches for 4-6 minutes until golden brown. Drain on paper towels.
- In the same skillet, add sesame oil and sauté minced garlic, ginger, and dried red chilies for 1-2 minutes until fragrant.
- Stir in tomato ketchup, soy sauce, chili garlic sauce, vinegar, and sugar. Let simmer for 2-3 minutes, adding water until desired consistency is reached.
- Add the fried chicken back into the skillet, tossing to coat until lightly simmered for another minute.
- Garnish with sliced green onions and toasted sesame seeds. Serve hot over rice, noodles, or in lettuce cups.
