Ingredients
  

For the Chicken
  • 1 lb Boneless, Skinless Chicken Breasts or Thighs Thighs really shine here!
  • 1/2 cup Cornstarch Coat thoroughly for crispiness.
  • 1 large Egg White Skip for a vegan version.
For the Sauce
  • 1/4 cup Vegetable Oil Canola or peanut oil recommended.
  • 1 tbsp Sesame Oil Use sparingly for flavor.
  • 4 cloves Garlic (minced) Fresh is best!
  • 1 tbsp Ginger (minced) Adjust to taste.
  • 2 pcs Dried Red Chilies or Crushed Red Pepper Flakes Modify based on spice preference.
  • 1/4 cup Tomato Ketchup Homemade works too!
  • 2 tbsp Soy Sauce Tamari can be used for gluten-free.
  • 1 tbsp Chili Garlic Sauce Adjust to fit your taste.
  • 1 tbsp Vinegar Rice vinegar recommended.
  • 1 tbsp Sugar or Honey Agave syrup is a vegan alternative.
  • 1/2 cup Water Add gradually as needed.
Optional Garnishes
  • 2 tbsp Sliced Green Onions For a refreshing crunch.
  • 1 tbsp Toasted Sesame Seeds Elevate flavor and presentation.
  • 1/4 cup Thin Strips of Fried Onion or Bell Pepper For extra texture.

Method
 

Instructions
  1. In a large bowl, combine the boneless chicken pieces with egg white, cornstarch, salt, and black pepper. Marinate for 10-15 minutes.
  2. Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat until shimmering. Fry the marinated chicken in batches for 4-6 minutes until golden brown. Drain on paper towels.
  3. In the same skillet, add sesame oil and sauté minced garlic, ginger, and dried red chilies for 1-2 minutes until fragrant.
  4. Stir in tomato ketchup, soy sauce, chili garlic sauce, vinegar, and sugar. Let simmer for 2-3 minutes, adding water until desired consistency is reached.
  5. Add the fried chicken back into the skillet, tossing to coat until lightly simmered for another minute.
  6. Garnish with sliced green onions and toasted sesame seeds. Serve hot over rice, noodles, or in lettuce cups.
