Method
 

Step‑by‑Step Instructions
  1. Preheat the oven to 350°F (175°C) and grease a 9-by-13 inch baking dish.
  2. Cook breakfast sausage with diced red bell pepper and white parts of green onions in a skillet over medium heat for 6-8 minutes.
  3. In a mixing bowl, whisk together large eggs, heavy cream, Dijon mustard, Tabasco sauce, salt, pepper, and green onion tops.
  4. Stir sausage mixture into egg mixture, then fold in cheddar cheese and hash browns.
  5. Pour mixture into prepared baking dish.
  6. Cover with foil and bake for about 50 minutes.
  7. Remove foil, sprinkle remaining cheddar on top, and bake at 400°F (200°C) for an additional 10-15 minutes.
