Step-by-Step Instructions
  1. Begin by gathering a sturdy glass and add about 10 fresh mint leaves to the bottom. Using a muddler or the back of a spoon, gently press down on the mint leaves for about 10–15 seconds until fragrant.
  2. Pour in 1/2 cup of fresh pineapple juice and 1/4 cup of coconut cream into the glass with the muddled mint. Add the juice of half a fresh lime and stir gently for about 20 seconds.
  3. Fill the glass generously with larger ice cubes, packing the ice to about three-quarters full.
  4. Carefully pour in about 1/2 cup of sparkling water, filling the glass to the brim. Gently stir the mixture again for about 10 seconds.
  5. Garnish with a sprig of fresh mint or a slice of pineapple on the rim of the glass. Serve immediately.
