Ingredients

For the Crust
  • 2 cups unsalted pretzel sticks Feel free to use salted pretzels but reduce added salt accordingly.
  • 1 cup old-fashioned rolled oats Quick oats can be used but may alter the overall texture.
  • 1/2 cup Concord grape jelly You can swap it with other fruit preserves for a different flavor twist.
For the Filling
  • 1 1/2 cups chunky peanut butter Smooth peanut butter can be used for a uniform texture.
  • 1 teaspoon vanilla extract Essential for enhancing the overall flavor profile.
  • 1/4 teaspoon salt Increase slightly if using salted pretzels for the crust.

Equipment

  • Food processor
  • small saucepan
  • mixing bowl
  • pie tin

Method

Step-by-Step Instructions
  1. Begin by processing 2 cups of unsalted pretzel sticks and 1 cup of old-fashioned rolled oats in a food processor. Pulse until they resemble coarse crumbs, about 30 seconds.
  2. In a small saucepan over low heat, melt 1/2 cup of Concord grape jelly until it turns golden and smooth, stirring frequently, approximately 3-5 minutes. Transfer it to the pretzel-oat mixture.
  3. Allow the crust mixture to cool to around 70°F (21°C) for about 10 minutes.
  4. In a large mixing bowl, combine 1 1/2 cups of chunky peanut butter with the cooled crust mixture. Stir until well blended, incorporating 1 teaspoon of vanilla extract.
  5. Press the pretzel mixture firmly into a 7-inch pie tin, using your fingers or the bottom of a measuring cup.
  6. Spread the creamy peanut butter filling evenly over the pressed pretzel crust.
  7. Refrigerate the pie at 38°F (3°C) for at least 15 minutes.
