Step-by-Step Instructions
- Preheat your oven to 375°F (190°C) and line your baking sheets with parchment paper.
- Cream together the softened unsalted butter, granulated sugar, light brown sugar, and creamy peanut butter using an electric mixer on medium speed for 2-3 minutes until light and fluffy. Mix in the egg and vanilla extract until smooth.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing gently until just combined.
- Roll the dough into 1-inch balls and roll each ball in granulated sugar. Place on prepared baking sheets, leaving about 2 inches of space.
