Ingredients

For the Oats Base
  • 1 cup old-fashioned oats
  • 1 cup milk or almond/oat milk
  • 1/2 cup Greek yogurt or non-dairy yogurt
  • 2 tablespoons chia seeds
  • 2 tablespoons maple syrup or honey/agave syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
For the Peaches
  • 1 cup diced peaches ripe, frozen, or well-drained canned
Optional Topping
  • 1/4 cup granola for crunch

Equipment

  • Bowl or Jar

Method

Step-by-Step Instructions
  1. In a large bowl or jar, combine old-fashioned oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, and a pinch of salt. Stir vigorously for about 1 minute until fully blended.
  2. Gently fold in half of the diced peaches, ensuring even distribution. Aim for 30 seconds of soft stirring to keep peach pieces intact.
  3. Cover the jar or bowl tightly and refrigerate for at least 4 hours, preferably overnight.
  4. When ready to serve, stir the oats to smooth out any clumps. If too thick, add a splash of milk.
  5. Spoon the remaining diced peaches on top and sprinkle granola over before serving. Enjoy!
