Ingredients

Base Ingredients
  • 1 bottle Vanilla Atkins Protein Shake Substitute with any low-calorie protein shake as needed.
  • 1 cup Low Fat Cottage Cheese Greek yogurt can be used for a similar texture.
  • 1 pack Pistachio Pudding Mix Ensure it's sugar-free for a lighter option.
  • 2 tablespoons Monk Fruit Sweetener Consider using any low-calorie sweetener of your choice.
  • 2 tablespoons Collagen (flavorless) Omit if preferred.
  • 1 teaspoon Almond Extract Use pure almond extract for the best taste.
Mix-ins
  • 1 cup Fresh Cherries Opt for seasonal varieties for optimal sweetness.
  • 2 tablespoons Agave (optional) Honey or other sweeteners can also be substituted.

Equipment

  • Ninja CREAMi
  • blender

Method

Instructions
  1. In a blender, combine the Vanilla Atkins Protein Shake, low-fat cottage cheese, pistachio pudding mix, monk fruit sweetener, collagen, and almond extract. Blend everything on high until completely smooth and creamy, about 30–45 seconds.
  2. Carefully pour the blended mixture into the Ninja Creami container, ensuring you don’t exceed the max fill line. Place the lid on loosely and freeze the container for a full 24 hours.
  3. After freezing, run warm water over the external sides of the Ninja Creami container for about 10–15 seconds.
  4. Insert the Ninja Creami container into the machine and select the 'Ice Cream' setting. Allow the Ninja Creami to process for approximately 1–2 minutes until the ice cream reaches a soft, creamy consistency.
  5. Once the ice cream has reached a nice creamy state, scoop a small indentation into the top half of the ice cream. Add the fresh cherries into this space.
  6. Using the 'Mix-In' setting on the Ninja Creami, blend the cherries into the swirled mixture for about 30 seconds.
  7. Using an ice cream scoop, serve the Ninja Creami Pistachio Cherry Ice Cream into bowls or cones.
