- In a blender, combine the Vanilla Atkins Protein Shake, low-fat cottage cheese, pistachio pudding mix, monk fruit sweetener, collagen, and almond extract. Blend everything on high until completely smooth and creamy, about 30–45 seconds.
- Carefully pour the blended mixture into the Ninja Creami container, ensuring you don’t exceed the max fill line. Place the lid on loosely and freeze the container for a full 24 hours.
- After freezing, run warm water over the external sides of the Ninja Creami container for about 10–15 seconds.
- Insert the Ninja Creami container into the machine and select the 'Ice Cream' setting. Allow the Ninja Creami to process for approximately 1–2 minutes until the ice cream reaches a soft, creamy consistency.
- Once the ice cream has reached a nice creamy state, scoop a small indentation into the top half of the ice cream. Add the fresh cherries into this space.
- Using the 'Mix-In' setting on the Ninja Creami, blend the cherries into the swirled mixture for about 30 seconds.
- Using an ice cream scoop, serve the Ninja Creami Pistachio Cherry Ice Cream into bowls or cones.
