- Preheat your oven to 425°F (220°C). Slice the zucchinis in half lengthwise and scoop out the centers to create hollow boats. Place cut-side up on a baking sheet and pre-bake for 10–15 minutes until slightly firm.

- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute, then introduce ground turkey. Cook for 6–8 minutes until browned. Stir in oregano, salt, pepper, ricotta, Parmesan, and roasted red peppers, mixing well.

- Remove pre-baked zucchini boats and spoon the turkey filling into each half. Top with shredded mozzarella.

- Return the filled zucchini boats to the oven and bake for an additional 15–20 minutes until the cheese is bubbling and lightly golden.

- Let the zucchini boats rest for about 5 minutes before serving. Garnish with fresh basil leaves and enjoy!
