- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine eggs, whole milk, and all-purpose flour. Whisk vigorously for about 1-2 minutes until well-blended and creamy with no lumps.
- Grease an 8x8 or 9x9 baking dish with cooking spray or olive oil.
- Layer the bottom of the dish with roasted green chiles.
- Pour half of the whisked egg mixture over the layer of chiles.
- Sprinkle half of the shredded Monterey Jack cheese on top.
- Repeat the process with the remaining roasted green chiles and the rest of the egg mixture.
- Finish by sprinkling the rest of the Monterey Jack cheese evenly across the surface.
- Place the casserole in the preheated oven and bake for about 35 minutes.
- Remove from the oven and allow to cool for 5-10 minutes before serving.
