Method
 

Casserole Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. Cook your choice of chorizo or breakfast sausage in a large skillet over medium heat. Add diced onion and bell pepper, cooking for 5-7 minutes until tender.
  3. In a mixing bowl, whisk together 8 eggs, 1 cup of milk or half-and-half, cumin, paprika, and salt until smooth.
  4. Begin layering by placing half of the corn tortillas at the bottom of the greased dish, followed by half of the cooked sausage mixture, cheese and half of the egg mixture.
  5. Repeat the layers with the remaining tortillas, sausage, cheese, and egg mixture.
  6. Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until golden brown.
  7. Allow the casserole to rest for 10 minutes before slicing.
  8. Slice into squares and serve warm with optional garnishes like cilantro, avocado, or salsa.
