Ingredients
  

For the Caramelized Onions
  • 2 medium Yellow Onions Can substitute with shallots.
  • 1 tablespoon Olive Oil Avocado oil can be used.
  • 1 tablespoon Butter Vegan butter for dairy-free.
  • 1 tablespoon Brown Sugar Honey or maple syrup are alternatives.
  • 1 tablespoon Balsamic Vinegar Red wine vinegar can work.
  • to taste Salt Adjust to taste.
  • to taste Black Pepper Adjust to taste.
For the Sautéed Mushrooms
  • 8 ounces Cremini Mushrooms Button mushrooms can be used.
  • 2 cloves Garlic Fresh garlic preferred.
  • 1/4 cup Dry White Wine Vegetable broth for non-alcoholic.
  • 1 teaspoon Fresh Thyme Dried thyme can be used in lesser quantity.
For the Sandwich Assembly
  • 4 slices Sourdough Bread Whole wheat or gluten-free as substitute.
  • 4 ounces Swiss Cheese Gruyère or provolone can be alternatives.
  • 2 tablespoons Softened Butter Can replace with olive oil.
  • optional Dijon Mustard Yellow mustard can also be a substitute.

Preparation Steps
  1. Thinly slice the yellow onions. In a skillet, heat olive oil and butter over low heat. Add onions and cook for 30-45 minutes until golden brown.
  2. Sprinkle in brown sugar and balsamic vinegar once onions are caramelized. Cook for an additional 2-3 minutes and remove from heat.
  3. In the same skillet, add more olive oil and sliced mushrooms. Sauté for 8-10 minutes until golden brown. Add minced garlic and thyme, cooking for an additional minute.
  4. Pour in dry white wine and scrape the bottom of the pan, simmer for 2-3 minutes until nearly evaporated. Remove from heat.
  5. Butter one side of each sourdough slice. On the unbuttered side, layer Swiss cheese, caramelized onions, and sautéed mushrooms. Optionally spread mustard on two unbuttered sides.
  6. Heat the skillet and place sandwiches in. Cook for 3-5 minutes on each side until golden brown and cheese is melted.
  7. Remove from skillet, let rest, cut in half, and serve immediately.

Notes

Perfect caramelization requires low heat. Season mushrooms to taste. Use fresh sourdough for the best texture. Cover skillet while grilling for even cheese melting. Don't overcrowd mushrooms when sautéing.
