- Preheat your oven to 350°F (175°C) and grease an 8x8 or 9x9 baking dish.
- In a mixing bowl, whisk together the eggs, milk, and flour until smooth.
- Spread a layer of roasted green chiles evenly across the bottom of the prepared dish.
- Sprinkle Monterey Jack cheese on top of the chiles and pour half of the egg mixture over it.
- Repeat the layers with more chiles, cheese, and the remaining egg mixture, finishing with cheese on top.
- Bake for 35 minutes until the top is golden brown and slightly puffed.
- Let it cool for about 10 minutes before serving. Cut into squares.
