- Begin by rinsing the cod fillets under cold water, then pat them dry using paper towels to ensure they sear nicely. Season both sides generously with salt and pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering. Add the seasoned cod fillets, searing them for about 2 minutes on each side until they turn light golden brown.
- Lower the heat to medium and add the minced garlic to the skillet. Sauté for 30–60 seconds until fragrant.
- Stir in the canned diced tomatoes along with dried oregano, red pepper flakes, salt, and pepper. Allow the mixture to simmer for about 5 minutes.
