Cooking Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent and soft. Incorporate the minced garlic and cook for another 30 seconds until fragrant.
- Transfer the sautéed onion and garlic mixture to a large mixing bowl. Add ground chicken, chopped spinach, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix thoroughly using your hands.
- Shape the mixture into 8 uniform patties, about ½ inch thick, and place them on a plate.
- In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Place the patties in the skillet, cooking for 5-6 minutes on each side until golden brown and fully cooked.
- Remove the patties from the skillet and place on a paper towel-lined plate to drain excess oil. Serve with veggies, tzatziki, or in pita bread.
