Ingredients
  

For the Patties
  • 1 pound Ground Chicken or ground turkey/plant-based alternative
  • 1 medium Diced Onion sauté until translucent
  • 2 cloves Minced Garlic preferably fresh
  • 1 cup Chopped Spinach can substitute with kale or Swiss chard
  • 1/2 cup Breadcrumbs gluten-free breadcrumbs optional
  • 1/2 cup Greek Yogurt sour cream can be used as a substitute
  • 2 tablespoons Dill or other herbs like parsley or mint
  • 1 teaspoon Oregano
  • 1 teaspoon Paprika smoked paprika for extra depth
  • 1 teaspoon Cumin
  • 1 tablespoon Lemon Juice preferably fresh
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste

Method
 

Cooking Steps
  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent and soft. Incorporate the minced garlic and cook for another 30 seconds until fragrant.
  2. Transfer the sautéed onion and garlic mixture to a large mixing bowl. Add ground chicken, chopped spinach, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix thoroughly using your hands.
  3. Shape the mixture into 8 uniform patties, about ½ inch thick, and place them on a plate.
  4. In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Place the patties in the skillet, cooking for 5-6 minutes on each side until golden brown and fully cooked.
  5. Remove the patties from the skillet and place on a paper towel-lined plate to drain excess oil. Serve with veggies, tzatziki, or in pita bread.
