  • 0.5 tsp Red Pepper Flakes

Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C).
  2. Prepare your vegetables by dicing, slicing, and chopping as needed.
  3. In a small bowl, combine oregano, thyme, salt, black pepper, and red pepper flakes.
  4. Divide bell pepper, onion, garlic, and tomatoes among baking dishes; add crumbled feta on top.
  5. Drizzle olive oil over the vegetables and sprinkle spice mixture.
  6. Bake in the oven for about 25 minutes.
  7. Stir the mixture and add spinach, allowing it to wilt.
  8. Create wells in the mixture for the eggs using a spoon.
  9. Crack the eggs into the wells and sprinkle lemon zest on top.
  10. Return the dish to the oven and bake for an additional 8-10 minutes.
  11. Let the dish rest for 2 minutes before serving.
  12. Garnish with fresh basil before serving.
