- Heat 1 tablespoon of oil in a large skillet over medium heat. Add the minced onion and cook for about 3-4 minutes until it becomes translucent and begins to soften. Next, stir in 3 cloves of minced garlic and sauté for an additional 30 seconds until fragrant.
- Add 2 tablespoons of tomato paste, 1/2 teaspoon of salt, 1/4 teaspoon of oregano, 1/4 teaspoon of paprika, and 1/4 teaspoon of red pepper flakes. Cook for about 2 minutes, stirring continuously.
- Pour in 1/2 cup of vegetable broth along with 1 can of rinsed white beans and 1/4 cup of sliced sun-dried tomatoes. Stir together and let simmer for 4-5 minutes.
- Fold in 1/2 cup of spinach and 1/2 cup of heavy cream into the skillet. Cook for another 2-3 minutes, stirring occasionally.
- Remove from heat. Garnish with 1/4 cup of freshly chopped basil and an extra sprinkle of red pepper flakes. Serve warm with crusty bread.
