Method
 

Preparation
  1. In a large bowl, whisk together the orange juice, olive oil, maple syrup, soy sauce, and red chili flakes until smooth.
  2. Add chicken leg quarters to the marinade, cover, and refrigerate for at least 4 hours, or overnight.
  3. Preheat the oven to 390°F (200°C). Line a baking pan with parchment paper.
  4. Lay half of the sliced oranges at the bottom of the pan. Place the marinated chicken skin-side up on top.
  5. Pour the remaining marinade over the chicken and scatter the rest of the orange slices and fresh thyme around.
  6. Cover the pan with damp parchment paper and bake for about 1 hour.
  7. Remove the parchment paper, spoon pan juices over the chicken, and bake uncovered for an additional 15 minutes.
  8. Let the chicken rest for 5 minutes before serving.
