Preparation
- In a large bowl, whisk together the orange juice, olive oil, maple syrup, soy sauce, and red chili flakes until smooth.
- Add chicken leg quarters to the marinade, cover, and refrigerate for at least 4 hours, or overnight.
- Preheat the oven to 390°F (200°C). Line a baking pan with parchment paper.
- Lay half of the sliced oranges at the bottom of the pan. Place the marinated chicken skin-side up on top.
- Pour the remaining marinade over the chicken and scatter the rest of the orange slices and fresh thyme around.
- Cover the pan with damp parchment paper and bake for about 1 hour.
- Remove the parchment paper, spoon pan juices over the chicken, and bake uncovered for an additional 15 minutes.
- Let the chicken rest for 5 minutes before serving.
