- In a small bowl, mash half of a ripe avocado with 1 teaspoon of lemon juice, a pinch of salt, and pepper.
- Take two slices of your chosen sourdough or artisan bread and spread mayonnaise or aioli on one side of each slice.
- On one slice, layer the mashed avocado mixture, followed by ½ cup of shredded chicken and two slices of cheese.
- Finish with the second slice of bread, mayo side facing outward.
- Melt 1 tablespoon of butter in a skillet over medium heat, then place the sandwich in the skillet.
- Grill for 3-4 minutes per side until golden brown and cheese is melted.
- Remove the sandwich from the skillet, let cool for a minute, then slice in half diagonally.
