Step-by-Step Instructions
  1. In a small bowl, mash half of a ripe avocado with 1 teaspoon of lemon juice, a pinch of salt, and pepper.
  2. Take two slices of your chosen sourdough or artisan bread and spread mayonnaise or aioli on one side of each slice.
  3. On one slice, layer the mashed avocado mixture, followed by ½ cup of shredded chicken and two slices of cheese.
  4. Finish with the second slice of bread, mayo side facing outward.
  5. Melt 1 tablespoon of butter in a skillet over medium heat, then place the sandwich in the skillet.
  6. Grill for 3-4 minutes per side until golden brown and cheese is melted.
  7. Remove the sandwich from the skillet, let cool for a minute, then slice in half diagonally.
