Method
 

Step-by-Step Instructions
  1. Combine 2 cups of old-fashioned rolled oats in a mixing bowl.
  2. Mix together 1 cup of natural peanut butter, ½ cup of maple syrup, and ¼ cup of melted coconut oil in another bowl. Stir in zest and juice of lemon and 1 tsp of vanilla until smooth.
  3. Pour the wet mixture into the bowl with oats and mix well until coated.
  4. Shape the mixture into cookies approximately 1-2 inches in diameter and place them on a lined baking sheet.
  5. Chill the cookies in the refrigerator for about 30 minutes until firm.
