- Pat the halibut fillets dry with paper towels and season both sides with salt and black pepper.
- Heat a large skillet over medium-high heat and add 2 tbsp of olive oil, letting it heat until shimmering.
- Add the halibut fillets to the skillet and sear for 4-5 minutes until the underside is golden.
- Flip each fillet over and cook for an additional 4-5 minutes until opaque and flaky.
- In a separate saucepan, melt 4 tbsp of unsalted butter over medium heat and add the minced garlic.
- Stir in lemon juice, lemon zest, parsley, thyme, and paprika or white pepper, simmering for 2 minutes.
- Drizzle the lemon herb butter sauce over the halibut fillets and serve immediately.
