  • 2 fillets Halibut substitute with cod or sea bass if preferred
  • to taste Salt for seasoning
  • to taste Black Pepper for seasoning
  • 2 tbsp Olive Oil high quality for frying
For the Lemon Herb Butter Sauce
  • 4 tbsp Unsalted Butter can use salted for different taste
  • 2 cloves Garlic finely minced
  • 2 tbsp Fresh Lemon Juice freshly squeezed preferred
  • 1 tsp Lemon Zest use fresh for optimum taste
  • 1 tbsp Fresh Parsley finely chopped
  • 1 tsp Fresh Thyme or 1/2 tsp dried
  • a pinch Paprika or White Pepper optional for subtle spice

Method
 

Cooking Steps
  1. Pat the halibut fillets dry with paper towels and season both sides with salt and black pepper.
  2. Heat a large skillet over medium-high heat and add 2 tbsp of olive oil, letting it heat until shimmering.
  3. Add the halibut fillets to the skillet and sear for 4-5 minutes until the underside is golden.
  4. Flip each fillet over and cook for an additional 4-5 minutes until opaque and flaky.
  5. In a separate saucepan, melt 4 tbsp of unsalted butter over medium heat and add the minced garlic.
  6. Stir in lemon juice, lemon zest, parsley, thyme, and paprika or white pepper, simmering for 2 minutes.
  7. Drizzle the lemon herb butter sauce over the halibut fillets and serve immediately.
