Ingredients
  

For the Tofu
  • 1 block Extra firm tofu Boiled for enhanced flavor.
  • 1 tbsp Paprika
  • 1 tbsp Garlic powder
  • 1 tbsp Ground coriander
  • 1 tbsp Light brown sugar Optional for lower-sugar version.
  • 2 tbsp Tamari Gluten-free soy sauce.
  • 1 tbsp Mirin Or rice vinegar as a substitute.
  • 2 tbsp Potato starch For crispy texture.
For the Salad Base
  • 1 small Red onion Can substitute with white onions or scallions.
  • 1 large English cucumber Persian cucumbers also work.
  • 1/4 cup Fresh herbs Mint and cilantro recommended.
For the Glaze
  • 1/2 cup Yogurt sauce Any yogurt of your choice.
  • 1 tbsp Lemon zest
  • 2 tbsp Lemon juice
  • 1 tbsp Maple syrup Honey can be used for non-vegan options.
  • 1 tbsp Mustard Your favorite variety.
  • 2 tbsp Oil Light olive oil or avocado oil.

Method
 

Preparation
  1. Begin by boiling 1-inch cubes of extra firm tofu in a pot of salted water for 10 minutes.
  2. Carefully drain the tofu and place it in a bowl to marinate with tamari and mirin.
  3. After 5-10 minutes, add potato starch, paprika, garlic powder, and ground coriander to the tofu.
  4. Preheat your oven to 425°F, then spread the tofu on a baking sheet and bake for 20 minutes.
  5. While the tofu is baking, smash the English cucumber and let it sit with salt for 10 minutes.
  6. In a bowl, combine lemon zest, lemon juice, maple syrup, mustard, and oil; whisk to emulsify.
  7. Once tofu is baked, mix it with cucumber, red onion, and herbs; toss with glaze and serve!
