- Preheat your oven to 425°F (220°C) and line a cupcake pan with paper liners.
- In a medium bowl, whisk together 1/2 cup of all-purpose flour, 1/4 cup of light brown sugar, and a pinch of salt. Pour in 4 tablespoons of melted unsalted butter and mix until it forms coarse crumbs. Set aside.
- In a large mixing bowl, combine 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/4 teaspoon of baking soda, and 1/2 teaspoon of salt. In another bowl, cream together 1/2 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy. Add in 2 eggs, 2 tablespoons of lemon zest, and 2 teaspoons of vanilla extract, mixing until fully incorporated.
- Gently fold 2/3 cup of Greek yogurt and 2 tablespoons of fresh lemon juice into the butter mixture until smooth. Add the dry ingredients and stir just until combined.
- In a small bowl, mix together 8 ounces of softened cream cheese, 1/4 cup of powdered sugar, and 1 teaspoon of vanilla extract until smooth.
- Spoon muffin batter into each lined cup, fill about 1/3 full, add a dollop of cream cheese filling, and top with more batter and streusel.
- Bake for 22 to 25 minutes, or until golden and a toothpick comes out clean. Allow to cool in the pan for about 5 minutes before transferring to a wire rack.
- Prepare the glaze by whisking together 3/4 cup of powdered sugar and 2 tablespoons of lemon juice until smooth and drizzle over cooled muffins.
