Method
 

Preparation Steps
  1. Prepare the rice noodles according to package instructions, soaking in hot water for 8 to 10 minutes. Drain and set aside.
  2. In a medium-high skillet, heat avocado oil until shimmering. Add chopped onion and a pinch of salt; cook for about 3 minutes until translucent.
  3. Add sliced green onions, kimchi, minced ginger, and garlic. Stir and cook for another 2 minutes until kimchi warms and fragrance releases.
  4. In a bowl, combine kimchi juice, coconut aminos, coconut sugar, and sriracha. Whisk together, then pour into skillet, mixing thoroughly.
  5. Add drained rice noodles to the skillet and toss to coat with sauce. Cook for an additional 2 to 3 minutes until heated through.
  6. Taste and adjust seasoning with salt and pepper. Remove from heat and serve hot, garnished with green onions or sesame seeds if desired.
