  • 1 cup Heavy Whipping Cream
  • 1 cup Parmesan Cheese, divided for sauce and topping
  • 1 cup Monterey Jack Cheese
For the Crunchy Topping
  • 1 cup Crushed Pork Rind Crumbs low-carb substitute for breadcrumbs

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil or butter.
  2. In a skillet, heat olive oil over medium heat, season shrimp with salt and pepper, and sear for 1-2 minutes on each side.
  3. Reduce heat to medium-low, add butter, sauté onions until translucent, then stir in garlic, basil, and nutmeg for a minute.
  4. Add heavy whipping cream, simmer for 5 minutes, then gradually stir in cheeses until smooth.
  5. Spread seared shrimp in the baking dish and pour the cream sauce over them.
  6. Mix remaining Parmesan with pork rind crumbs and sprinkle over the dish.
  7. Bake for 25 minutes until golden and bubbly, then let rest before serving.
