- Thaw the puff pastry according to package directions while preheating your oven to 400°F (200°C). Dust a workspace with flour.
- Melt 2 tablespoons of unsalted butter in a medium skillet. Add diced apples, brown sugar, cinnamon, and a pinch of salt; sauté for 5–7 minutes.
- Roll out the puff pastry to about 1/8-inch thickness and cut into 4-inch squares.
- Place about 1 tablespoon of apple filling in the center of each pastry square and fold to form a triangle. Crimp edges with a fork.
- Whisk together egg and water for the egg wash. Brush over tops of sealed turnovers.
- Bake in the preheated oven for 20–25 minutes until golden brown.
