  1. In a large pot, melt the butter and olive oil over medium heat. Add the onion, carrot, and celery, sauté for about 5 minutes until soft.

  3. Sprinkle the flour over the softened vegetables, stirring continuously for 1-2 minutes to create a roux.
  4. Gradually pour in the chicken broth while whisking to prevent lumps. Next, add milk and heavy cream while stirring continuously.
  5. Reduce the heat to low and let the soup simmer gently for 10-15 minutes.
