For the Cream Cheese Frosting

Method
 

Preparation

  2. Melt the butter and mix with brown sugar until smooth and glossy.
  3. Add the egg and vanilla extract, whisking until creamy.
  4. Sprinkle in flour, cinnamon, baking powder, and salt; fold until just combined.
  5. Fold in the shredded carrots until evenly distributed.
Frosting and Baking
  1. Beat cream cheese until smooth, then gradually add powdered sugar and mix well.
  2. Layer half of the batter in the pan, add half of the frosting, and repeat.
  3. Swirl the mixtures together lightly for a marbled effect.
  4. Bake for 35-40 minutes until edges are golden and center is slightly jiggly.
  5. Cool completely in the pan for at least an hour before slicing.
