Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Cream together softened butter and sugar until light and fluffy. Add egg and vanilla, mixing until combined. Gradually sift in flour and baking powder, mixing until a dough forms. Chill for 15 minutes.
  2. Scoop tablespoon-sized portions of dough and roll into balls. Place on a baking sheet, spacing 2 inches apart. Flatten each ball with a fork. Bake for 8-10 minutes until edges are golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  3. In a bowl, combine softened cream cheese and powdered sugar until smooth. Adjust sweetness if needed. Set aside.
  4. Spread a tablespoon of cream cheese filling on one cookie and top with another cookie, pressing gently to form a sandwich. Repeat until all cookies are used.
  5. Melt the white chocolate and drizzle over each sandwich, then sprinkle with red and blue sprinkles. Let set slightly before serving.
  6. Top sandwiches with fresh strawberries and blueberries. Arrange on a platter to serve.
