Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Prepare cauliflower florets by breaking them into bite-sized pieces.
  2. In a high-speed blender, combine chipotle peppers in adobo sauce, vegan yogurt, fresh garlic, maple syrup, salt, and paprika. Blend until smooth.
  3. Place the cauliflower florets in a large mixing bowl and pour the spicy marinade over them. Toss thoroughly.
  4. Spread the coated cauliflower on a baking sheet lined with parchment paper. Roast for about 40 minutes, tossing halfway through.
  5. In a medium bowl, smash ripe avocados until creamy and mix in vegan yogurt, fresh cilantro, lime juice, minced garlic, and a pinch of salt.
  6. Warm your tortillas until pliable, spread avocado crema, and top with spicy roasted cauliflower, pickled onions, and cilantro.
