Preparation Steps
  1. In a medium bowl, combine graham cracker crumbs and sugar. Pour in melted unsalted butter and mix until fully combined. Press this mixture into the bottom of a greased 9-inch springform pan and place in the freezer for about 15 minutes.
  2. Beat the softened cream cheese and powdered sugar together until smooth and creamy, about 2-3 minutes. In another bowl, whip the heavy cream to soft peaks and gently fold into the cream cheese mixture.
  3. Add crushed pineapple, sweetened shredded coconut, and rum extract to the cream cheese mixture and gently fold until just combined.
  4. Pour the creamy cheesecake filling over the chilled crust and smooth the top evenly. Cover with plastic wrap and refrigerate for at least 3-4 hours to set.
  5. Run a knife around the edges of the springform pan before releasing the sides. Garnish with whipped cream and cherries if desired, slice, and serve chilled.
