- Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
- In a microwave-safe bowl, melt 1 cup of unsalted butter until just melted. Combine with 1 cup granulated sugar and 1 cup brown sugar until smooth.
- Add 4 large eggs and 1 teaspoon of vanilla extract, whisking until light and well combined.
- Sift together 1 cup of flour, 1 cup of cocoa powder, and a pinch of salt. Gradually fold this into the wet mixture without overmixing.
- Mix in 1 teaspoon of mint extract until evenly distributed.
- Pour the batter into the prepared pan and bake for 25-30 minutes until a toothpick comes out with a few moist crumbs.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- In a mixing bowl, beat together 1 cup unsalted butter and 3 cups powdered sugar until creamy. Add 2-3 tablespoons of heavy cream, 1 teaspoon of mint extract, and optional green food coloring. Mix until fluffy.
- Spread a layer of mint frosting over the cooled brownies, and sprinkle mini chocolate chips and crushed peppermint candy on top.
