- Preheat your oven to 375°F (190°C) and grease a medium-sized baking dish.
- In a skillet over medium heat, sauté diced onions in olive oil for about 5 minutes.
- In a large bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the grated Parmesan cheese.
- Shape the mixture into a loaf and place it in the greased baking dish.
- Sprinkle the remaining grated Parmesan cheese over the top of the meatloaf.
- Bake for 45-50 minutes until the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for about 10 minutes before slicing.
