  • 1 cup Low Fat Cottage Cheese Don't skip if you dislike it, as its taste is masked.
  • 1 cup Salsa Choose your favorite brand or make it homemade.
  • 1 cup Cheddar Cheese Grate your own for better melt quality.
Optional Add-Ins
  • 1 can Black Beans Rinse and drain well if canned.
  • Toppings Customize with tomatoes, olives, or avocados.

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add ground beef and finely chopped onions, cooking for about 10 minutes.
  3. Once cooked through, stir in taco seasoning and let simmer for 2-3 minutes.
  4. In a mixing bowl, combine beef mixture with Greek yogurt, cottage cheese, salsa, and ¾ cup cheddar cheese until smooth.
  5. Transfer the mixture into an 8x8 baking dish and top with the remaining cheddar cheese.
  6. Bake for 20-25 minutes until bubbly and the cheese is melted.
  7. Allow it to cool slightly before serving with tortilla chips or veggies.
