Method
 

Directions
  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken breasts dry with paper towels and create a pocket by slicing horizontally without cutting all the way through.
  3. Gently insert a slice of pepper jack cheese into each chicken pocket and secure with toothpicks if necessary.
  4. Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3-4 minutes on each side.
  5. Whisk together blackberry preserves, balsamic vinegar, minced garlic, smoked paprika, black pepper, salt, and optional chili flakes until glossy.
  6. Transfer the seared chicken to a lightly greased baking dish, pour the glaze over, and bake for about 25 minutes until chicken reaches 165°F (74°C).
  7. Let the chicken rest for 5 minutes, then garnish with chopped parsley and serve warm.
