Step‑By‑Step Instructions
  1. Set your Instant Pot to sauté mode. Add olive oil and allow it to heat for about 1 minute. Toss in the finely chopped onion and minced garlic. Sauté for 2-3 minutes until onion becomes translucent.
  2. Add the boneless, skinless chicken breasts cut into pieces. Season with salt and black pepper. Sauté for another 2-3 minutes until lightly browned.
  3. Stir in the rinsed long-grain white rice. Pour in the chicken broth and add the frozen mixed vegetables. Stir thoroughly to combine.
  4. Close the lid of your Instant Pot and set the valve to sealing position. Cook on high pressure for 8 minutes.
  5. Allow for a natural pressure release for 5 minutes. Then switch to quick release to let out remaining steam. Open the lid carefully.
  6. Gently stir in the heavy cream and shredded cheddar cheese until well incorporated and melted.
  7. Serve hot, optionally garnishing with fresh herbs like parsley or chives.
