For the Chicken
  • 1 pound Boneless Skinless Chicken Thighs Chicken breast can be used for a leaner option.
For Garnish
  • 1/4 cup Fresh Coriander Enhances presentation and flavor.

Method
 

Marinade Preparation
  1. Whisk together coconut milk, soy sauce, brown sugar, minced garlic, grated ginger, lime juice, turmeric powder, and chili powder in a large mixing bowl.
  2. Ensure all ingredients are well combined, resulting in a smooth and fragrant marinade.
Marinating the Chicken
  1. Add the boneless skinless chicken thighs to the bowl and fully coat them in the marinade.
  2. Cover with plastic wrap and refrigerate for at least 1 hour, ideally overnight.
Cooking Steps
  1. Preheat the skillet over medium-high heat or prepare the air fryer.
  2. Add a splash of oil once hot for a nice sear.
  3. Carefully place the marinated chicken thighs into the heated skillet or air fryer.
  4. Sear each side for about 6-8 minutes or until they reach an internal temperature of 165°F.
  5. Remove the chicken from heat and let rest for a few minutes.
