For the Chicken
  • 4 pieces Chicken Thighs (bone-in, skin-on) boneless thighs for quicker cooking

Method
 

Cooking Instructions
  1. In a medium bowl, whisk together the soy sauce, honey, and peanut butter until smooth and creamy.
  2. Add rice vinegar, ginger, garlic, cumin, coriander, and red pepper flakes. Stir in sesame oil and lime juice.
  3. Place chicken thighs in a resealable plastic bag and pour marinade over, ensuring well-coated. Refrigerate for at least 2 hours.
  4. Preheat the grill to medium-high or the oven to 400°F (200°C).
  5. Grill chicken for 6-8 minutes per side or roast for 35-40 minutes, ensuring internal temperature of 165°F is reached.
  6. Let the chicken rest for 5 minutes before serving.
  7. Transfer to a serving platter and garnish with cilantro and sesame seeds.
