  • 2 cups Pasta Use your choice of pasta, preferably whole grain.
  • 1 cup Cucumbers Diced for crunch.
  • 1 cup Tomatoes Chopped, adds sweetness.
  • 1/2 cup Red Onion Finely sliced for flavor.
  • 1 cup Feta Cheese Crumbled, optional.
  • 1/4 cup Olive Oil For dressing.
  • 2 tbsp Red Wine Vinegar For acidity.
  • 1 tsp Oregano Dried for seasoning.

Method
 

Salad Preparation
  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large mixing bowl, combine cucumbers, tomatoes, red onion, feta cheese, olive oil, red wine vinegar, oregano, salt, and pepper.
  3. Add the cooled pasta to the bowl and toss everything together until well mixed.
  4. Chill the salad for at least 30 minutes before serving to allow the flavors to meld.
