- Wash the baby potatoes thoroughly. In a large pot, add enough salted water to cover the potatoes and bring it to a boil. Carefully add the potatoes and par-boil them for 8–10 minutes, then drain and set aside to cool slightly.
- In a spacious skillet, heat 1 tablespoon of olive oil over medium-high heat until shimmering. Add the par-boiled baby potatoes and sauté for about 5–7 minutes, stirring occasionally.
- Once the potatoes are golden brown, reduce the heat to medium and add another tablespoon of olive oil. Whisk in the Dijon mustard, honey, and chicken broth while stirring gently. Allow this mixture to simmer for about 2–3 minutes.
- Remove the skillet from heat and transfer the honey mustard potatoes to a serving dish. Garnish with freshly chopped chives and serve immediately.
