Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a medium casserole dish with cooking spray or a thin layer of olive oil.
  2. In a large mixing bowl, combine the non-fat Greek yogurt, light cream cheese, minced garlic, salt, and ground black pepper. Mix until smooth and creamy.
  3. Gently fold in the shredded cooked chicken, fresh baby spinach, chopped artichoke hearts, and half of the shredded mozzarella cheese.
  4. Pour the mixture into the greased casserole dish, spreading it evenly. Sprinkle the remaining mozzarella cheese and grated Parmesan on top.
