  • 1 piece Bay Leaf Remove before serving.
  • 1 teaspoon Dried Thyme Fresh thyme can be used.
  • to taste Black Pepper Adjust to spice preference.
  • 6 cups Low-Sodium Chicken or Vegetable Broth Base of the soup.
  • to taste Salt Depending on the saltiness of ham.
Finishing Touches
  • 1 teaspoon Smoked Paprika Optional.
  • 1 tablespoon Apple Cider Vinegar or Lemon Juice Optional.

Step-by-Step Instructions
  1. In a large pot, heat olive oil over medium heat. Add diced onion, chopped carrots, and sliced celery. Sauté for 5-7 minutes until softened.
  2. Add minced garlic and sauté for another minute.
  3. Add the smoked ham hock or diced ham and rinsed split peas. Stir well.
  4. Add bay leaf, thyme, black pepper, and pour in broth. Bring to boil, then reduce heat to low.
  5. Simmer gently for 1 to 1.5 hours until the peas are tender and soup thickens.
  6. Taste and adjust seasoning. Optionally add apple cider vinegar or lemon juice before serving.
  7. Ladle the soup into bowls and serve hot.
