- Brown the Beef: In a large soup pot or Dutch oven, heat a drizzle of oil over medium heat. Add the ground beef and cook, breaking it apart with a spatula, for about 5–7 minutes or until browned and no longer pink. Drain excess fat.
- Sauté Aromatics: Add the chopped onion and minced garlic to the pot with the beef. Sauté for 2–3 minutes until the onion becomes translucent and fragrant.
- Mix in Tomatoes and Seasonings: Stir in the diced tomatoes and tomato sauce, followed by salt, pepper, paprika, and sugar. Allow to simmer for 3–4 minutes to thicken.
- Add Broth and Bay Leaf: Pour in the beef broth and add a bay leaf. Bring to a gentle boil, watching for bubbles to form.
- Incorporate Cabbage: Add chopped cabbage, stir to coat in broth, cover and reduce heat to low. Let simmer for 25–30 minutes until tender.
- Add the Rice: Stir in cooked rice and simmer uncovered for 5–10 minutes.
- Final Taste Adjustment: Taste the soup and adjust seasonings before serving. Remove the bay leaf.
