- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- In a large skillet, add olive oil and sauté chopped onion for 3-4 minutes. Stir in minced garlic and cook for another 30 seconds. Add lean ground beef and cook until browned, seasoning with paprika, dried oregano, salt, and pepper.
- In a medium bowl, whisk together Greek yogurt, light sour cream, and cornstarch until smooth.
- Layer half of the thinly sliced russet potatoes in the greased dish, followed by half of the beef mixture, half of the creamy mixture, and half of the cheddar cheese. Repeat the layering process.
- Pour the beef broth around the edges of the casserole dish.
- Cover the baking dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake uncovered for an additional 15-20 minutes until the top is golden and bubbly.
- Remove from the oven and let rest for about 10 minutes. Sprinkle fresh parsley on top before serving.
