Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. In a large skillet, heat olive oil over medium heat, add chopped onion and minced garlic, sauté for 3-4 minutes.
  3. Add ground beef, breaking it apart, cook for 5-7 minutes until browned, seasoning with paprika, oregano, and salt and pepper.
  4. Layer half of the sliced potatoes evenly across the bottom of the baking dish.
  5. Spoon half of the beef mixture over the potatoes, followed by half of the sour cream and half of the cheddar cheese.
  6. Repeat the layering with the remaining potatoes, beef, sour cream, and cheddar.
  7. Pour beef broth around the edges of the dish.
  8. Cover the dish with aluminum foil and bake for 45 minutes.
  9. Remove foil and bake for an additional 15-20 minutes until cheese is golden brown.
  10. Let it rest for 10 minutes before serving, garnishing with parsley.
