  • 8 oz Whole Wheat Linguine or gluten-free pasta or zucchini noodles
For the Salmon
  • 4 oz Salmon pre-portioned Mowi salmon
For the Sauce
  • 1 cup 2% Milk or unsweetened almond/oat milk for vegan option
  • 1 tbsp Cornstarch
  • 2 tbsp Butter or olive oil for dairy-free option
  • 2 tbsp Olive Oil for sautéing
  • 3 cloves Garlic freshly chopped
For the Vegetables
  • 4 cups Spinach fresh
  • 1 cup Cherry Tomatoes or diced regular tomatoes
  • 1/2 cup Sun-Dried Tomatoes preferably oil-packed
For Finishing Touches
  • 1/2 cup Parmesan Cheese freshly grated or omitted for dairy-free
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions
  1. Preheat a nonstick pan over medium heat while cutting the salmon into four equal pieces.
  2. Lightly spray the pan with olive oil and sauté the salmon skin-side down for about 5 minutes.
  3. Carefully flip the salmon, cover with a lid, and cook for an additional 2 minutes.
  4. Remove the salmon and keep it warm under foil or a kitchen towel.
  5. In the same pan, add 2 tablespoons of butter and sauté garlic for about 1 minute.
  6. Combine 1 tablespoon cornstarch with 1 tablespoon milk, then whisk into the pan and let it thicken.
  7. Stir in Parmesan, salt, pepper, spinach, cherry tomatoes, and sun-dried tomatoes, cooking until spinach wilts.
  8. Return the salmon to the pan and allow to heat through for about a minute.
  9. Serve the creamy salmon and sauce over the plated pasta.
