- In a large mixing bowl, combine shredded cooked chicken, hot sauce, Greek yogurt, diced celery, and optional blue cheese. Mix until well-blended.
- Rinse the cucumber and cut it into long strips about 1/4 inch thick.
- Take a cucumber strip and place 1-2 tablespoons of the chicken mixture at one end. Roll it up while tucking the sides in to secure the filling.
- Arrange the assembled rolls on a serving platter with the seam side down. Garnish as desired.
- Serve immediately or chill for up to 30 minutes before serving.
