- Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish.
- In a large skillet, heat olive oil over medium heat and sauté the diced onion for 3–4 minutes until translucent.
- Add ground turkey to the skillet and cook for 5–6 minutes until browned.
- Mix in minced garlic, diced red bell pepper, and diced sweet potatoes. Season with smoked paprika, ground cumin, dried thyme, salt and pepper, and sauté for 3–5 minutes.
- Pour the mixture into the prepared baking dish and cover tightly with aluminum foil.
- Bake for 25 minutes, then check if sweet potatoes are fork-tender.
- Remove foil, sprinkle shredded cheese on top, and bake uncovered for an additional 10–15 minutes until cheese is melted.
- Let cool slightly and garnish with parsley or cilantro before serving.
