  • 2 cups Sweet Potatoes peeled and diced
  • 2 tbsp Olive Oil for sautéing
  • 1 medium Onion finely diced
  • 2 cloves Garlic minced
  • 1 piece Red Bell Pepper diced
  • 1 tsp Smoked Paprika
  • 0.5 tsp Ground Cumin optional
  • 0.5 tsp Dried Thyme or fresh thyme
  • Salt and Pepper to taste
For the Topping
  • 1 cup Shredded Cheese or nutritional yeast for dairy-free
  • Fresh Parsley or Cilantro optional for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat and sauté the diced onion for 3–4 minutes until translucent.
  3. Add ground turkey to the skillet and cook for 5–6 minutes until browned.
  4. Mix in minced garlic, diced red bell pepper, and diced sweet potatoes. Season with smoked paprika, ground cumin, dried thyme, salt and pepper, and sauté for 3–5 minutes.
  5. Pour the mixture into the prepared baking dish and cover tightly with aluminum foil.
  6. Bake for 25 minutes, then check if sweet potatoes are fork-tender.
  7. Remove foil, sprinkle shredded cheese on top, and bake uncovered for an additional 10–15 minutes until cheese is melted.
  8. Let cool slightly and garnish with parsley or cilantro before serving.
