Ingredients

  • 1 medium Fresh Pineapple Canned pineapple can be used if fresh is not available.
  • 1 medium Red Bell Pepper Yellow bell pepper can also be used for visual appeal.
  • 1 medium Yellow Bell Pepper Substitute with other colorful peppers as desired.
For the Glaze
  • 1/4 cup Olive Oil Use another cooking oil if preferred.
  • 2 tablespoons Honey Maple syrup can be used for a different flavor.
  • 2 tablespoons Soy Sauce Tamari can be used for a gluten-free option.
  • 1 tablespoon Dijon Mustard Yellow mustard can be substituted if needed.
  • 1 teaspoon Garlic Powder Fresh minced garlic can also be used.
  • 1 pinch Black Pepper Enhances overall seasoning.

Preparation
  1. Prepare the Glaze: In a medium mixing bowl, whisk together olive oil, honey, soy sauce, Dijon mustard, garlic powder, and black pepper. Set aside.
  2. Chop the Ingredients: Slice kielbasa into 1-inch rounds, cut pineapple into 1-inch chunks, and chop the bell peppers. Ensure even sizes for uniform cooking.
  3. Assemble the Skewers: Thread kielbasa, pineapple, and bell peppers onto skewers, alternating ingredients. If using wooden skewers, soak them in water for 20 minutes prior.
  4. Brush with Glaze: Brush each skewer generously with the prepared glaze for optimal flavor.
  5. Preheat the Grill: Preheat the grill to medium heat (around 350°F / 175°C) and ensure the grates are clean and lightly oiled.
  6. Grill the Skewers: Place the skewers on the grill for 10-12 minutes, turning occasionally until the kielbasa is tender and the pineapple is caramelized.
  7. Brush with Additional Glaze: For extra flavor, brush the skewers with more glaze during the last few minutes of grilling.
  8. Serve and Enjoy: Once grilled to a char, let skewers rest for a couple of minutes before serving them warm, perhaps with a side of rice or salad.
