  • 1 medium avocado sliced or mashed
  • 1/4 cup nuts or seeds almonds or sunflower seeds work well
Optional Creamy Tahini Dressing
  • 1/4 cup tahini
  • 2 tablespoons lemon juice or lime juice
  • 1 clove garlic minced or powder
  • 2 tablespoons water adjust for consistency

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine olive oil, soy sauce, garlic powder, paprika, salt, and pepper. Marinate the chicken breasts for at least 30 minutes.
  2. Preheat the oven to 400°F (200°C). Peel and cube the sweet potatoes, toss with olive oil, cinnamon, salt, and pepper. Roast for 25-30 minutes.
  3. Heat the grill to medium-high. Grill the marinated chicken for 6-8 minutes per side until cooked to an internal temperature of 165°F (75°C).
  4. In a small bowl, whisk together tahini, lemon juice, minced garlic, and water until smooth for the dressing, if desired.
  5. Assemble the bowls starting with quinoa or brown rice, then add greens, roasted sweet potatoes, and grilled chicken. Top with tahini dressing, avocado, and nuts or seeds.
