Ingredients
  

For the Meatballs
  • 1 pound Ground Beef or ground turkey, chicken, or lamb
  • 1/2 cup Breadcrumbs use panko for extra crunch
  • 1/4 cup Fresh Parsley or fresh cilantro, can be omitted
  • 1/4 cup Grated Parmesan Cheese or feta for a saltier bite
  • 1 teaspoon Garlic Powder or fresh garlic for stronger flavor
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Ground Cumin or coriander for different flavor
  • 1/2 teaspoon Ground Cinnamon or nutmeg
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black Pepper red pepper flakes can be added
  • 2 tablespoons Olive Oil or avocado oil
For the Bowl
  • 2 cups Cooked White Rice or quinoa, cauliflower rice
  • 1 cup Cherry Tomatoes halved, or diced bell peppers
  • 1 medium Cucumber or zucchini
  • 1/2 medium Red Onion or green onions
  • 1/2 cup Kalamata Olives or any black olives
For the Tzatziki
  • 1 cup Tzatziki Sauce Greek yogurt mixed with lemon juice, garlic, and cucumber
  • 2 tablespoons Fresh Lemon Juice or lime juice

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, fresh parsley, grated Parmesan, garlic powder, oregano, cumin, cinnamon, salt, and pepper. Mix well.
  3. Shape the mixture into meatballs about 1 to 1.5 inches in diameter and place on a greased baking sheet.
  4. Drizzle olive oil over the meatballs and bake for 15 to 20 minutes until golden and cooked through.
  5. While baking, cook rice according to package instructions.
  6. In a separate bowl, combine halved cherry tomatoes, diced cucumber, sliced red onion, and olives. Toss gently.
  7. Assemble bowls with rice, veggie mixture, and meatballs on top.
  8. Drizzle tzatziki over meatballs and squeeze fresh lemon juice on top.
  9. Serve immediately.
